Those who love seafood know where to go in this area; the restaurant belonging
to Paola Ferrari and Roberto Pongolini is considered a "must".
The wait (the dishes are strictly prepared to order) is well worth it: the class
of Nicola Chimienti, young chef offering innovative dishes together with Roberto
Pangolini, also working in the kitchen. The mainly fish dishes use only the freshest
ingredients, such as “finestra sul mare” (a raw fish dish), lasagnetta with mullet
and cream of broccoli, torretta of umbrine with flaked almonds and Maldon sea
salt, in addition to some renewed traditional dishes, including artisanal salame,
36-month prosciutto, manichette (a kind of anolini) with braised meat stuffing,
pork cheek on a bed of polentina and duck liver terrine. And for dessert: hot
chocolate torte with raspberry sauce and capsicum ice-cream, thick coffee zabaglione,
tiramisu semi-freddo with chocolate sauce.
And finally the wine list, offering a wide range of interesting Italian and foreign
labels.
Female serving staff only.
