EUROPEAN FOOD SAFETY AUTHORITY AND COOKING SCHOOLS
The European Food Safety Authority (EFSA) was made up in January 2002, atfer
a series of food crises in the 1990s, as an independent source of scientific advice
and communication on risks associated with the food chain. EFSA has been created
as part of a comprehensive programme to improve EU food safety, that has to ensure
a high level of consumer protection and restore and even maintain confidence in
the EU food supply. Thanks to this system, European consumers are among the best
protected and best informed and consequently more self confident in this field
as regards risks in the food chain.
In the magnificent ducal palace in Colorno takes place the University of gastronomic
science and the headquarter of the international cooking school Alma which represents
the most authoritative centre to develop the Italian food art all over the world.
The high skilled school trains chefs coming from abroad until they became real
professional men of Italian Cooking, especially thanks to vanguard techniques
and high level programmes carried out by the most outstanding professors recognised
in this field.
Gualtiero Marchesi is in fact Rector / chancellor of the school.
The mission of Academia Barilla is to protect, develop, and promote the art of
Italian gastronomy and culture around the world. It develops the Italian culinary
art by celebrating traditions, nourishing innovation, and promoting the knowledge
and the enjoyment of Italian regional cuisines. Products, courses, publishing
and consultancy services provided by Academia Barilla serve as the key roads towards
fulfilling this mission. An Advisory Board composed of international and Italian
institutions - all authorities in the culinary, gastronomic, or enological fields,
oversees the activities of Academia Barilla.
